Who is the program for?
Rutherford Technical Services has developed this training program specifically to meet the requirements of supervising and key kitchen support staff working in a range of food service settings, including:
kitchen/food service Managers & Supervisors
key kitchen support staff (leading hands, 2IC’s, etc.)
- kitchen volunteer supervisors (working in canteens, Meals on Wheels, aged care and respite services, etc.)
working in the following areas:
aged care
health care
child care
food retailers, franchises, etc.
canteens
respite services
- home & community care
What are the program outcomes?
The program has been developed to provide supervising food handlers, especially with no prior formal HACCP education, with the essential skills and knowledge needed to understand HACCP and how to implement a Food Safety Plan in a busy kitchen.
On completion of the program, your staff will be able to:
understand the purpose of HACCP and its origins
identify the main parts of a HACCP program and Food Safety Plan
identify common barriers to implementation
- use practical tools to assist implementation of the Food Safety Plan
How is the program completed?
The program is completed in a half day session (4 hours).
Ideally participants should have already completed the Food Safety Review (Level 1) training program. Participants should also have a sound understanding of food safety, kitchen operations and awareness of any existing Food Safety Plan.
Participants are provided with a set of bound course notes that are laser colour printed and in an easy-to-read format (text size, index, etc.). The training is delivered on site in a training room or similar using a PowerPoint presentation, along with other aides and activities are completed during the session.
Is there a test or a certificate?
Yes. After the training participants are asked to complete a written assessment that consists of practical:
multiple choice
- short answer questions
The workbook is then assessed by our qualified team and feedback given. If successful, participants are issued with a Certificate of Completion listing the topics covered.
If our assessors feel that the answers given are lacking, we contact the participant to complete the questions verbally.
If your staff require accredited training, please contact us for more detailed information. Usually we will need a third party report (the pro-forma is provided by Rutherford) and possibly some additional assessment material.
Once the assessment material has been reviewed we issue a Statement of Attainment, that has the accredited training logos and is the same as a TAFE qualification.
