Pasteuriser Operator's Course

Course Objectives:

This course is relevant to any food processing operation that requires thermal processing of products, where this is the principle preservation step.

Participants from a wide range of industry sectors will benefit from this course, but in particular:

  • dairy factory staff
  • juice manufacturing staff
  • brewery staff
  • spring water manufacturing staff
  • soft drink and cordial manufacturing staff
  • lab and testing staff
By the end of this course, the participant will be able to:
  • state the reason for pasteurisation and describe the effects of pasteurisation on food components and microbial populations

  • identify the methods, types of construction and installation of pasteurising plants

  • assess the integrity of a pasteurising plant

  • state the relationship between microbial test results and pasteurising plant operation

  • state the steps involved in the operation and cleaning of the pasteurising plant including cleaning in place (CIP)

  • identify and investigate causes of food safety and quality failures due to unsatisfactory operation and cleaning of pasteurising plants

  • state the legal requirements associated with pasteurisation of foods
General Information:

The course will be conducted in a relatively informal manner and include food specific information (for example, dairy chemistry for dairy industry participants). Discussion is encouraged throughout the course and also includes exercises in problem solving.

The course is designed to meet the unit FDFZPRHT2A - Operate a heat treatment process from the Food Processing Training Package (FDF03).

Participants will be provided with a set of indexed course notes (colour) and will be provided with an assessment Workbook. Participants are also requested to complete a Feedback form.

An additional workshop can be conducted, covering specific issues related to the manufacture of particular foods (for example fruit juice, brewing, etc.) and related safety and quality issues.

All participants attending the course will receive a Certificate of Attendance listing the topics covered.

For those participants who require accredited training, please contact us to arrange for a customised assessment plan to achieve a Statement of Attainment for the unit FDFZPRHT2A - Operate a heat treatment process from the Food Processing Industry Training Package (FDF03).

For those participants who require a Statement of Attainment for the actual operation of a pasteuriser, they will complete a written exam, taking approximately one and a half (1½) hours, during the final day of the course.

Each participant will then complete a practical assessment in their workplace. This is conducted by the relevant body in that State/Territory, and upon successful completion of both components, a certificate is issued.

In NSW, Safefood NSW conducts the workplace assessment. This takes approximately half to one (½ - 1) hour at a cost of $140.00 per hour. Rutherford Technical Services will liase with Safefood NSW to organise the workplace assessment.

DURATION: 2 days

COST: $ 750.00 (training and written exam only)
